With the holiday this week, most of my cooking and kitchen energy will be spent preparing Thanksgiving dinner (and wrangling the kids, because everyone will be home from school). But if you’re in a pinch, and need some easier than usual ideas, here you go:
Monday: Rotisserie chicken with frozen broccoli and 90 second rice (omit if Whole30) This is the rice I get from Costco. This literally takes 10 minutes to prepare, and can be made Whole30 by omitting the rice. Please note that not all rotisserie chicken are created Whole30. I often get the plain flavor from Whole Foods, but I have seen them at other other grocery stories, as well as at Walmart. Just be sure to check the ingredient list.
Tuesday: Whole30 Ground Beef Burrito Bowl (Paleo, Keto) by Tastes Lovely this an incredibly easy and delicious dish. So many fresh ingredients, and perfect if you have family in town, everyone can make their own bowls or tacos.
Wednesday: This is the day that I will be in the kitchen preparing the majority of the Thanksgiving meal, so we will likely end up ordering pizza, and making a quick salad with some leftover veggies. However, making something light and fresh is always lovely idea, as you will likely be eating heavier foods tomorrow. A no cook option seems best: Tuna Salad by Rach L Mansfield paired with Simple Mills Almond Crackers

Friday: Leftovers! Be sure to tune in to Instagram stories, those leftovers are going to be turned into something beyond delicious. In fact, I told Roger that I was *almost* more excited about the leftovers! Haha!
