Hello, friends! It seems that quarantine life is catching up with me. Late bedtimes, frequent snacks, less exercise, more wine, has me feeling blahhhhh. And given that the kids are home all day, errrrrrry day, I need all the energy I can get. So, I have decided to do a 10 day Whole30 reset. I am also open to going past 10 days, depending on how I am feeling. I'll keep you posted!
This week’s adventure food: bell peppers from our fajita meal. The kids insist they're not fans of peppers, but I will keep offering. Besides, isn't everything better with guacamole.
Dinner: Sloppy Janes by the Defined Dish My oldest's absolute favorite, and truthfully, one of mine, too. It's such a simple and hearty dish. I will serve with steamed broccoli, and over biscuits for the boys, and a baked sweet potato for myself.
Dinner: Skillet Chicken Fajitas by the Whole Cook This looks fantastic. Fresh, simple and very satisfying. I will serve with traditional fajita fixings, and paleo tortillas for the boys, and lots of romaine lettuce for myself.
Dinner: Whole30 Pan Seared Cod by Joyinthemeantime This is one of my favorite ways to prepare cod, it's simple and delicious. I will serve with roasted Brussels sprouts, brown basmati rice for the boys, and cauliflower rice for myself.
Dinner: Paleo Beef & Broccoli Stir Fry by Eat the Gains Take-out inspired Fridays is one of my favorite things. I just love cozying up with a delicious plate of food, my husband, and a good movie. The kids usually request a DIY pizza night. 😉
