Congratulations to everyone who completed their January Whole30, whoop, whoop! How are you feeling? I am definitely feeling so much better. My sleep is deeper, my skin clearer, my bloat less, and my energy is level significant improved. So. Good.
As mentioned previously, I will not be doing a proper reintroduction, as I have many times before, and am familiar with what foods affect me negatively. However, I will continue to work on my food freedom, and my goal to continue identifying my worth it foods.
We will be heading out of town for a few days, but I will be sure to demo a few cooking tutorials before we leave. So, stay tuned to Instagram stories.
This week’s adventure food: The mushrooms from Thursday's chicken and broccoli casserole.
Dinner: Chicken Pot Pie Soup by Mary's Whole Life I have made this soup twice before, and it was such a hit. Especially with my middle son, who LOVES soup! I will serve with dinner rolls (omit if Whole30), and a simple side salad.
Dinner: Foolproof Salmon by Joy in the Meantime The easiest and most delicious way to cook salmon. The kids are especially fond of this recipe, and I just love how fast it comes together. I will serve with roasted potatoes and Brussels sprouts.
Dinner: Sloppy Jane's by The Defined Dish Hands down one of the kid's FAVORITE meals! This goodness is requested so frequently, which is why it make frequent appearances. You can serve on brioche buns, baked sweet potatoes, or even on their own. I will serve with steamed broccoli.
Dinner: Whole30 Chicken and Broccoli Casserole by Downshiftology This looks like absolute heaven, and the perfect comfort dish for a cold February day. This may be a bit of a stretch for the kids, as they still prefer food "not be all mushed together," so I will offer a slightly deconstructed version.
Dinner: And while Fridays are usually reserved for take-out inspired dishes, this week is Valentine's Day! The perfect time to make something more decadent and over the top. And what's better than a fancy steak? I will serve this with smashed potatoes and caramelized mushrooms and onions.
