Meal Plan: February 17th

Mid February, friends! Spring is just around the corner, and I am looking forward to longer sunlight and all the hope that comes with budding trees and flowers. We will returning home from vacation, so I want to be sure to keep this week simple and chalk full of clean and healthy ingredients.

This week’s adventure food: kale from the Zuppa Tosca soup

Dinner: Baked Chicken Thighs by Downshiftology I will serve with some roasted potatoes and green beans.

Dinner: Easy Chicken Fajitas by Delish This is one of those dishes that comes together incredibly quickly, tastes delicious and completely satisfies. I will serve with paleo tortillas , guacamole, salsa, jalepenos, and fresh romaine lettuce.

Dinner: Healthy Zuppa Toscana by 40 Aprons served with dinner rolls (omit if Whole30), and a side salad. Zuppa Toscana has to be one of my all time favorite soups. I love the hearty rich flavors, and even the added element of heat, if desired. I do tend to tone down the heat, for the sake of the boys.

Dinner: Perfect Baked Cod by Delish I will serve with asparagus, and rice (omit if Whole30) or you can sub for cauliflower rice.

Take-Out Friday

Dinner: Whole30 Shrimp Pad Thai by No Crumbs Left   I have made this a few times before, and it does not disappoint. I also love the swap from chicken to shrimp, as I have been working to incorporate more seafood and fish into our diet.
