Meal Plan: February 24th

Well, well ... it seems February is already winding down, and spring is even closer! I am extremely ready for days filled with longer sunlight, and so much less bundling up before we head out anywhere.

My January Whole30 was a great round, and I really feel it reset my cravings, and some of the late night snacking that has always been a struggle. We recently took a trip to Costa Rica, and I found that I was craving lighter, cleaner, healthier foods.

I do not eat Whole30 or Paleo all the time, but I do strive to eat like this at least 80% of the time. I feel SO much better, and find it's easier to really identify "worth it" foods (enter: Thin Mints). I hope you have a wonderful week filled with laughter and delicious dishes!

Dinner: Recently, I have been trying to switch up our protein sources from just meat, so include things like more eggs and fish. So, we are kicking off the week with Scrambled Peppers and Eggs by New York Times Cooking I will serve with roasted potatoes.

Dinner:: Simple Fish Tacos. I will be using my Foolproof Cod. I will add a squeeze of lime, and set under the broiler for 1-2 minutes to crisp up the edges a bit. I will serve the usual taco fixings: guacamole, salsa, shredded cabbage, romaine lettuce, jalapeños. I will also keep things paleo with grain free tortillas and tortilla chips.

Dinner: I was recently introduced to Jean from What Great Grandma Ate on her Whole30 Recipes take over. Everything she made looked so fresh, delicious and satisfying. I even ordered her new cookbook, because OMG! I will be making her Paleo & Whole30 Cauliflower Falafel  and will serve with greens and hummus.


Dinner: Dairy Free Broccoli Cheese and Potato Soup by Marys Whole Life My middle boy LOVES soup, and Mary's soup never disappoints. Thursdays are one of our busiest days with after school activities, so I need something that will come together quickly. I will serve with dinner rolls (omit if Whole30), and a side salad.

Dinner: Casablanca Chicken by Confessions of a Clean Foodie This girl has some of my all time favorite take-out inspired dishes. She recently shared this recipe on her Whole30 Recipes takeover, and I have been dying to make it! I will serve with cauliflower rice.
