I can’t believe it’s already February! And for many of you, you have successfully completed your Whole30, whoop, whoop! How are you feeling? I still have one week left, but am feeling a million times better than when I started. As I have mentioned, this round was more difficult than some of my others. I think my food freedom around the holidays, and our trip to Disney was pretty free- ha! So,I am happy to feel more like myself.
I was sure to include another week of easy lunch ideas, especially if you are planning to do the reintroduction that comes after your 30 days. Remember, you did your entire Whole30 for this very reason - you want to see what your food sensitivities are, as well as how your body reacts. If you have not done a proper reintroduction, please be sure to do it. This is one of the major turning points in better understanding your food freedom, worth it foods, and improving your relationship with food.
This week’s adventure food: capers from Wednesday's Chicken Piccata recipe.
Lunch: Crock Pot Sweet Potato Chili by Cotter Crunch My older two are not fans of chili, so I will meal prep this and eat throughout the week.
Dinner: I have a full teaching day on Monday, so I need something that will be ready as soon as I get home. Enter, the slow cooker! I am really excited about this recipe: Easy Slow Cooker Pork Loin by the Recipe Rebel. It calls for unsweetened apple juice, which is cool even if you are still on your Whole30. They allow for fruit juices to enhance or flavor dishes.
Lunch: If you're not down with the Chili idea, this Heathy Mexican Chicken Meal Prep by 40 Aprons looks delicious!
Dinner: Prosciutto Wrapped Halibut with a Lemon Dill Caper Sauce by the Defined Dish. Ummmm ... this sounds incredible! I will serve with roasted Brussels sprouts and both brown (omit if Whole30) and cauliflower rice.
Lunch: Whole30 Cobb Salad with Lemon Tahini Dressing by A Clean Bake that dressing sounds like heaven.
Dinner: Whole30 + Keto Chicken Piccata by Tastes Lovely Our freezer is chalk full of chicken, and I couldn't think of a more delicious way to use them! I will be serving with spaghetti squash and garlic break (omit if Whol30).
Lunch: Chicken Pesto Wraps by The Whole Smiths I am a big fan of pesto, and these look so satisfying and the perfect way to switch up a boring lunch.
Dinner: Orange Dijon Chicken by Nom Nom Paleo This looks incredibly delicious and super easy. I will serve with roasted potatoes and a simple side salad.
Lunch: Lettuce Wrap Sub Sandwiches by Against All Grain Get your sandwich fix while staying compliant.
Take-Out Dinner: Paleo Dan Dan Noodles by I Heart Umami As soon as I saw this recipe demo, I knew I needed to try this for my next take-out Friday! It looks incredibly delicious, and also very easy. Sold!
