Rolling hard into March, people! Bram's birthday is the week, as well as about a million other happenings. Roger has a few business trips, as well as the contractor continuing work on the second floor. I want to keep things as easy, and light as possible.
Daylight savings has brought with it some extra morning light, and I can already feel my mood shifting. Bring. On. Spring.
This week’s adventure food: asparagus from Wednesday's side.
Dinner: Bram has requested pizza for his official birthday dinner, and I thought it would be fun to keep things clean, but also add an element of fun. We will be making the Quick and Easy Paleo Pizza Crust by The Paleo Running Momma and having them choose their own toppings.
Dinner: Crispy Baked Chicken Thighs by the Salty Marshmallow This is my go-to way to prepare chicken. It's effortless and completely delicious. You can also season as desired. I will serve with side salad, and smashed potatoes.
Dinner: Greek Style Baked Cod by the Mediterranean Dish I am always on the hunt for new ways to prepare fish, and this recipe sounds delicious. I will swap flour for arrowroot flour, and butter for ghee. I will serve with rice, and asparagus.
Dinner: Thursdays are one of our busiest days, with extracurricular actives, and a longer work day for Roger. I like to keep things as simple as possible. This week I am going to try Breakfast Tacos from House of Yumm I can also limit additional meat, by using eggs for our protein source. Serve with desired toppings! Note: if you want to keep Paleo, be sure to sub bacon and tortillas for compliant ones, as well as omit the cheese.
Dinner: Whole30 + Keto Asian Beef Bowls by Tastes Lovely This looks so flavorful, and satisfying. Super excited to give this a try.
