This week’s adventure food is Creamy Coconut Shrimp with Tomatoes! I love the combination of shrimp and tomatoes, especially in a pasta-like dish. I can’t wait for my boys to experience this comfort food!
Monday
Dinner: Blackened Cajun Tilapia with Avocado and Tomato Salsa from Healthy Little Peach served with steamed broccoli and cauliflower rice or brown Basmati rice.
Tuesday
Dinner: Bacon Wrapped Chicken from Nyssa’s Kitchen served with Smashed Sprouts and mashed cauliflower or mashed potatoes.
Wednesday
Dinner: Sweet Potato Pork Fried Rice from Real Simple Good served with brown Basmati rice for the boys.
Thursday
Dinner: Creamy Coconut Shrimp with Tomatoes from Slender Kitchen served over zucchini noodles or regular pasta noodles.
Friday
Dinner: Chicken Enchiladas from The Whole Crowe served with cauliflower rice or brown Basmati rice and beans.
