The boys are back to school, and though, it's an abbreviated day, I am so happy they are able to have some face to face learning. As we work to find our new rhythm, I think it's important to keep consistent with meal planning, one less thing for me to stress about!
Note about this week's meal plan, I will be using my friend's Charlotte's new cookbook, in case you're looking for some new recipe inspiration!
This week’s adventure food: Jambalaya
Monday
Dinner: Sheet-Pan Jambalaya by Clean Foodie Confessions I will be using the recipe from Charlotte's new cookbook, but she has this tasty one on her blog. I will serve a deconstructed version to the boys.
Tuesday
Dinner: Pan Seared Salmon served with avocado salsa and (cauliflower) rice
Wednesday
Dinner: Epic Whole30 Baked Meatballs by the Defined Dish. I will serve this with spaghetti squash, grain free pasta (for the boys), and with a house salad
Dinner: Crispy Baked Chicken Thighs by The Salty Marshmallow served with roasted cauliflower, and a house salad
Dinner: Paleo Orange Chicken by I Heart Umami I will serve with brown and cauliflower rice.
