Season salmon fillets generously with salt and a good pinch of black pepper, set aside
Heat skillet over medium high heat for approximately 4 minutes - you can tell it's ready when a sprinkle of water sizzles
Once the skillet is hot, add your fat of choice, carefully swirling around, ensuring the bottom of the pan is completely covered
Add the fillets one at a time, placing them skin side up, going away from you (this prevents splatter on you), and allow to sit UNTOUCHED for 4 minutes, then flipping for another 4 minutes, lower the heat to medium after flipping
Remove from heat, and serve as desired
