Super *Secret* Veggie + Ground Beef Taco Meat

Ingredients

  • 1 lb ground beef
  • 1 lb frozen cauliflower rice
  • 2 packets Siete Foods taco seasoning or 3 Tablespoon homemade taco seasoning (recipe linked above)
  • 1/2 cup green pepper diced
  • 1/2 cup yellow onion diced
  • 2 tbsp avocado oil
  • 1/2 cup water
  • 1/2 lime

Instructions

  • Heat pan over medium high heat, add the oil, swirling around the pan, add the onions and peppers, sauteeing until the onions are nearly translucent, about 3 minutes
  • Add the ground beef, browning until the meat begins to crisp, and the moisture has absorbed
  • Add in the taco seasoning, water and stir to combine, then add cauliflower rice, and stir again *the cauliflower rice will release additional moisture, be sure to allow it to evaporate (about 3 minutes)
  • Once the moisture has absorbed, and you are ready to remove from heat, squeeze the lime over top, and serve as desired
