Easy Whole30 Egg Salad for One

Ingredients

  • 2 eggs hard boiled
  • 1 tbsp mayonnaise check your label
  • 1 tsp yellow mustard check your label
  • 1/8 tsp paprika
  • 1 tbsp green onions thinly sliced
  • salt and pepper to taste

Instructions

  • Slice the eggs into a small bowl, add in all the ingredients, and gently mix with a spatula
  • Serve as desired - I like to serve over mixed greens with an additional pinch of paprika and salt and pepper
