Buffalo Chicken Salad (Whole30 Paleo and Keto)

- 3 cups Chicken (about 1 rotisserie chicken cubed or shredded (about 1” pieces)
- 1 cup Celery, diced
- 3/4 cup Mayo, Whole30 & Paleo compliant
- 1/2 teaspoon Garlic powder
- 1/4 teaspoon Onion powder
- 3 tablespoon Buffalo sauce
- 1 squeeze Lemon, juice
- 1 pinch salt
- 1 pinch pepper
- Buffalo sauce- a little goes a long way
- If you are trying to keep Whole30 or Paleo, be sure to check the ingredient list (some store-bought rotisserie chicken have non-compliant additions)
- As with most cold salads, they are best if chilled at least 1 hour- overnight is best
- Can be served a variety of ways: over mixed greens, in a grain-free wrap, or on a sandwich, or with grain-free crackers
- Note: Crackers and grain-free bread are not considered Whole30
