Buffalo Chicken Salad (Whole30 Paleo and Keto)

Ingredients

  • 3 cups Chicken  (about 1 rotisserie chicken cubed or shredded (about 1” pieces)
  • 1 cup Celery, diced
  • 3/4 cup Mayo, Whole30 & Paleo compliant
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Onion powder
  • 3 tablespoon Buffalo sauce
  • 1 squeeze Lemon, juice
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Combine all ingredients 
  • Recommend chilling for at least an hour, but not necessary 

Notes

  1. Buffalo sauce- a little goes a long way
  2. If you are trying to keep Whole30 or Paleo, be sure to check the ingredient list (some store-bought rotisserie chicken have non-compliant additions)
  3. As with most cold salads, they are best if chilled at least 1 hour- overnight is best
  4. Can be served a variety of ways: over mixed greens, in a grain-free wrap, or on a sandwich, or with grain-free crackers
  5. Note: Crackers and grain-free bread are not considered Whole30
