Cucumer Salmon Roll-Ups with a Creamy Ginger Sauce

Ingredients

Ingredients for Roll Ups
  • 1 English cucumber
  • 4 oz smoked salmon cut into strips
  • ½ avocado thinly sliced
  • 2 large radishes cut into matchsticks
Ingredients for Sauce
  • ¼ cup mayo
  • 1 Tbsp honey
  • 1 TB coconut aminos
  • 1/2 tsp ground ginger

Instructions

  • To make the sauce, mix all sauce ingredients thoroughly and set them aside
  • Trim ends of the cucumber and then using a mandolin, slice cucumber lengthwise – about 1/8 thick set aside
  • Top cucumber sliced with salmon, avocado, radishes and carefully begin to roll up – then secure with a toothpick. Chill until ready to serve, up to 2 hours, and then serve with cucumber rolls
