Cucumer Salmon Roll-Ups with a Creamy Ginger Sauce

Ingredients for Roll Ups
- 1 English cucumber
- 4 oz smoked salmon cut into strips
- ½ avocado thinly sliced
- 2 large radishes cut into matchsticks
Ingredients for Sauce
- ¼ cup mayo
- 1 Tbsp honey
- 1 TB coconut aminos
- 1/2 tsp ground ginger
To make the sauce, mix all sauce ingredients thoroughly and set them aside
Trim ends of the cucumber and then using a mandolin, slice cucumber lengthwise – about 1/8 thick set aside
Top cucumber sliced with salmon, avocado, radishes and carefully begin to roll up – then secure with a toothpick. Chill until ready to serve, up to 2 hours, and then serve with cucumber rolls
