🍲 Creamy Mushroom & White Bean Stew Recipe 🌿
This hearty stew combines earthy mushrooms, tender potatoes, and creamy white beans in a thyme and rosemary-infused broth. Perfect for those meatless dinners or just when you want something cozy!
You’ll Need:
- Butter, 3 Tbsp
- 1 diced medium onion
- Sliced mushrooms, 1 lb
- Thyme & rosemary, 1 tsp each
- Sea salt & pepper
- Minced garlic, 4 cloves
- Cornstarch, 2 Tbsp (or substitute)
- Coconut aminos, 2 tsp
- Dijon mustard, 1 Tbsp
- Vegetable broth, 3 cups
- Baby potatoes (1/2” cubes), 1 lb
- White beans (e.g., butter beans), 2 cans (15 oz each)
- Milk, 2 cups
To Make:
1. Melt butter in a pot. Sauté onion, then add mushrooms, herbs, salt, and pepper. Cook until mushrooms brown.
2. Stir in garlic, then cornstarch. Add coconut aminos, mustard, broth, and potatoes. Boil, then simmer until potatoes are tender.
3. Add beans and milk and simmer until thickened. Season to taste.
