There’s something about warm weather and frozen treats that scream childhood, and with spring in full motion, Summer is definitely just around the corner! While these snacks are great, and my kids love them, there’s nothing like a sweet treat every once and awhile! After all, is it even summer if ice cream and popsicles aren’t involved? In an effort to make this childhood staple a little more nutritious, I created this recipe for strawberry popsicles! 

Full disclosure, this recipe was inspired by Orange Creamsicles, and they have all the creaminess you’d expect. However, what they don’t have is all the processed ingredients and added sugar that comes in traditional, store-bought creamsicles. Even better, we love to make them after an annual trip to Thompson’s Strawberry Farm. Every year, I put a reminder on my phone to plan a trip so we can get there before everything becomes too picked over. What results is always a wonderful afternoon in the sunshine, and the fun only continues when you get the kids involved and teach them how to make Strawberry Popsicles!

How to Make Strawberry Popsicles

The great thing about this recipe for Strawberry Popsicles is that they’re made in just 5 steps with 6 whole-food ingredients! The sweetness of the strawberries, maple syrup, and honey are the best compliment to creamy coconut milk. They’re sure to be your child’s new favorite treat! 

To make this recipe for Strawberry Popsicles, start a simmer by placing your strawberries, water, and honey into a large pot over medium-high heat. Let the mixture simmer for about 5 minutes if you’re using fresh strawberries or 6-7 minutes if you’re using frozen strawberries. 

Next, use a potato masher to smash the strawberries in order to release their juices. Remove the pot from the heat, and use a blender to puree the strawberries. Once blended, place the strawberries in the freezer for about 30 minutes in order to cool. 

While the strawberries are cooling, use either an emulsion blender or a mixer to whip together the coconut milk, vanilla extract, and maple syrup. This step will take about 2 minutes, and the mixture should be decently frothy. Remember, you won’t get the peaks you see with heavy cream! 

Now that your mixture is well-blended and fluffy, use a spoon to add the two mixtures into your popsicle molds. Be sure to alternate between the strawberries and the cream blend! 
Finally, freeze the molds for at least 6 hours or overnight, and enjoy!

Ingredient Alternatives and Add-Ins for Strawberry Popsicles

All of the ingredients in this recipe for strawberry popsicles are Paleo, but they aren’t set in stone! Feel free to modify, adjust, and experiment with how to make strawberry popsicles to fit your needs and taste buds. Some ingredient swaps include: 

  • Berries – Any berries you have on hand would work well for this recipe! Alternatively, you could also add in whole or chopped berries for extra flavor and texture.

  • Juice – If you don’t want to take the time to simmer and mash berries, you could also use fruit juice to form your strawberry popsicles. To keep things healthy, just be careful to opt for a more natural option as many can be loaded with unnecessary sugars and additives.

  • Greek Yogurt – Substituting Greek yogurt for coconut milk is a great way to add more protein to this recipe!

  • Almond Milk – Almond milk is a great alternative to coconut milk. I recommend using the vanilla flavored versions and omitting the vanilla extract.

  • Cereal – Add whole-grain cereal into your popsicles to add fiber, healthy carbs, and texture.

  • Nuts – Chopped nuts make a great add-in for extra fat to keep your kids full.

What Can I Use to Make Homemade Strawberry Popsicles?

Popsicle molds can typically be found in most grocery stores and even in few craft shops. I used these molds I purchased through Amazon. However, if you don’t have them on hand or don’t want to purchase molds, there are tons of DIY options to choose from as well! For instance, you could use muffin tins, paper or plastic cups, ice cube trays, or even yogurt cups. If you’re looking for more ideas and instructions, take a look at this article. Feel free to get creative and use whatever you have on hand. However, I do recommend investing in wooden popsicle sticks for easy snacking and mess-free hands. 

What is the Difference Between Creamsicles and Popsicles? 

Okay, technically, these strawberry popsicles are actually creamsicles. However, for simplicity’s sake and to save myself from answering a million questions from my boys, I called them popsicles. Like popsicles, creamsicles contain the fruity icee section. However, unlike popsicles, they also have a creamy, often dairy-based center or swirl. Ultimately, creamsicles are the perfect combination of ice cream and popsicles! 

There ya have it, the best warm weather snack! Make them ahead of time, and store them in your freezer in a Ziploc bag or individually wrapped in plastic for up to 6-8 months for a healthier treat any time of the year.

Paleo Strawberry Creamsicles

Ingredients

  • 5 cups Fresh or frozen strawberries (I froze my fresh ones)
  • 3 tbsp Water
  • 2-3 tbsp Honey (helps with tart factor)
  • 1 can Coconut milk
  • 1 tsp Vanilla extract
  • 2 tsp Maple syrup

Instructions

  • Place strawberries, water and honey into a large pot and simmer until strawberries soften, about 5 minutes for fresh and 6-7 for frozen
  • Use a potato masher to help get the strawberry juices out
  • Remove from heat and use either a regular or emulsion blender to puree the strawberries. Place in freezer to cool for about 30 minutes
  • Using either an emulsion blender or mixer, whip together the coconut milk, vanilla extract and syrup. It should be decently frothy after about 2 minutes. Keep in mind you won't get the magnificent peaks you would with heavy whipping cream, but it's still hella tasty.
  • Alternating between strawberry puree and cream, spoon mixture into popsicle molds. Freeze for at least 6 hours. I usually do over night just to be safe.
  • Enjoy!
